Description

Darío Bernal-Casasola (Universidad de Cádiz) will present his research on the ancient Roman fermented fish sauce known as garum and fish salting industries in Pompeii and Baelo Claudia. This research includes interdisciplinary work with chemical analyses to understand garum production. This has also resulted in reconstructing a recipe for garum, which attendees can sample at the talk.
